How to make a perfect pancake

Bridget McNulty recently became the proud owner of a 20cm Swiss Diamond pan, and reckons she’s found the way to make a perfect pancake (and you always thought it was about the recipe).
“Be warned! Once you’ve cooked using a Swiss Diamond pan, you’ll never be able to use any other saucepan. Ever.
It’s that different.
The Swiss Diamond is deliciously non-stick, so much so that you can make gravy, white sauce, fry fish or even (so I’ve heard) caramel, and not have to scrape the pan. Not even have to do anything except give it a little wipe with a paper towel. I call that a miracle.
