Chocolate brownies tips

Don’t overmix your batter (especially if using an electric mixer) when you make brownies. If you are aiming to make something dense and fudgey, mixing will incorporate air into the batter and result in something light and fluffy.

Don’t use any leavening agent in your brownie mixture (like baking powder or bicarb of soda)

Don’t over bake. You want your brownies to be a little bit moist in the middle when you take them out of the oven. Err on the side of caution, dry brownies are a dime a dollar.

Always use the best quality ingredients that you can afford. For going all out and making very special brownies use the best brands of ingredients (pure butter, real vanilla extract not essence etc)

Pegs are suprisingly handy for brownie baking. Use them to peg the paper firmly into place onto the edges of the pan, once the batter is in the pan you can remove the pegs.
